Initial Beef can't be found

I have been playing fine on a new world I created for a few days. I decide to put the add on on my realm. I log in but didn't realise I was in the middle of the Nether with fire all around me so I run to a portal. I could see the outline of Beef when I was in the Nether but he didn't follow me to overworld.

I go back to the Nether and he isnt there.

I deactivate the add on and reactivate it and nothing. I get the initial book but no Beef.

I load a backup and install the add on. I get the book but no Beef.

So where do I go from here? Even on a backup from days ago is there a marker somewhere that says beef has already spawned?
